DIRECTIONS:
INSTRUCTIONS
1. In a large soup pot over medium heat, add the oil, onion, and bell pepper. Saute for 5 minutes. Then, add the minced garlic. Saute 2-3 minutes. Next, add the cubed sweet potatoes (cut to about 1/2 inch thick) and saute another 5 minutes.
2. Add the ground turkey and continue cooking until it's fully browned. Then, add all of the spices and continue mixing until combined.
3. Next, add the tomato paste and pumpkin puree. Stir to combine.
4. Add all remaining ingredients. Mix. Turn the heat to medium-high to bring to a light simmer. Then, reduce the heat to low-medium, add a lid, and let cook for 30 minutes, stirring occasionally to avoid burning the bottom. *Tip: Add more chicken broth for a thinner consistency.
5. When ready to serve, add your favorites toppings and enjoy!
